We offer four varieties, each with its own distinct character:
Baerii (Acipenser baerii — Siberian Sturgeon): Smooth, buttery pearls with a gentle nutty finish. Medium-sized, dark glossy grains with a clean, accessible flavour.
Imperial (Select Grade — Mature Sturgeon): A refined selection of larger, golden-hued pearls aged to perfection. Rich, creamy texture with a long, elegant finish.
Oscietra (Acipenser gueldenstaedtii — Russian Sturgeon): Rich, complex pearls ranging from golden amber to deep brown, with a distinctive hazelnut character and subtle brininess.
Beluga (Huso huso — Beluga Sturgeon): The pinnacle of caviar. Exceptionally large, silky pearls that dissolve on the palate with a delicate, creamy, oceanic finish. Our most exclusive selection. -
All our caviar is sourced from sustainable farms in Europe that uphold the highest standards of traceability, water purity, and animal welfare. Our sturgeon are raised in low-density, spring-fed systems that closely replicate their natural habitats.

Absolutely. Sustainability is a core value at Rivotti Caviar, not a trend. All our caviar is CITES certified and comes exclusively from eco-conscious aquaculture farms. We work only with partners who share our vision of responsible gastronomy — from responsible feeding practices to carefully controlled ecosystems that protect the species we depend on.

CITES (Convention on International Trade in Endangered Species) is an international agreement that regulates the trade of wildlife products, including caviar. Our CITES certification guarantees full traceability of every tin — from the farm to your table — ensuring no wild sturgeon populations are harmed.

The main differences are sturgeon species, grain size, and flavour profile:
Baerii: Small to medium grains (2.2–2.7 mm). Buttery, nutty, clean finish. Our most accessible caviar and a great starting point.
Imperial: Medium to large grains (2.7–3.2 mm). Creamy, rich, elegant. A select grade from mature sturgeon — exceptional value.
Oscietra: Medium to large grains (2.7–3.2 mm). Complex, hazelnut, briny. One of the most prized caviar varieties worldwide.
Beluga: The largest grains of all. Creamy, delicate, oceanic. Considered the ultimate caviar experience. -
Most of our caviars are available in 20g, 30g, 50g, 125g, 250g, 500g, and 1000g tins. The 20g and 30g sizes are perfect for personal tasting or a romantic dinner, while 125g and above are ideal for entertaining or special occasions. For hospitality or larger quantities, please contact us directly.

Yes! We offer free shipping on all orders within the Netherlands.

All orders are shipped in insulated packaging with cooling elements to ensure the caviar arrives fresh and at the correct temperature. We use express delivery to minimise transit time.

Keep your caviar in the coldest part of your refrigerator, ideally between −2°C and +2°C. An unopened tin can be stored for several weeks. Once opened, consume within 2–3 days for the best flavour and freshness. Serve caviar chilled, straight from the tin or in a glass or crystal bowl placed on crushed ice. Use a mother-of-pearl, bone, or glass spoon — never metal, which can alter the taste. Caviar is best enjoyed on its own, on blinis, or with a small amount of crème fraîche. We offer both blinis (€6) and mother-of-pearl spoons (€8) in our shop.

Metal (especially silver and stainless steel) can react with caviar and impart a metallic taste that masks its delicate flavours. Mother-of-pearl, bone, horn, or glass spoons are the traditional and recommended choice

As a general guide: 10–15g per person as an appetiser or tasting, 25–30g per person for a generous serving. For a caviar-focused dinner or celebration, 30–50g per person allows your guests to truly savour the experience.
